can you leave your cakes out of the ref. I did them today and used buttercream frosting with sweetex. It turned out wonderful, The wedding is on this Sat. and I am not sure if I should ref. the cakes or not. I used the same frosting for filling.

I don't normally make my cakes that far in advance for a Saturday wedding so refrigeration will most likely be required.

You iced your cakes earlier than I would also. Maybe you can box and wrap in plastic and keep in fridge?

Most b/c frostings don't require refrigeration. icon_smile.gif

Even though buttercream and the cake both do not require refrigeration. The moistness of the cake and the buttercream sitting out that long at room temp can cause it to mold.

Thank you to all of you! I did like you said. I boxed and wrapped in plastic and put in the ref. I just want to thank you all for helping me with this. The cake looks wonderful ! thanks to you all ! I will post pictures after the wedding. This is oor youngest son getting married.
