How To Ice A Cake With Cream Cheese Icing

I have attempted to do this twice. Both times the cream cheese icing has tried to melt off the sides. PLEASE help me !!!!

I don't have an answer for you. I too have tried to do this without much luck. It hasn't melted...I just can't get it smooth! But I thought for next time I would try adding some meringue powder, maybe that will help?

I had a lady request cream cheese icing on a white cake, I have only used cc icing on carrot ect.. type cakes but I didn't say anything after all it's her cake. So I just used cream cheese in place of butter in my regular buttercream icing recipe and she loved it. It spread, smoothed and crusted just like regular bc icing, and she was happy.

Try the Crusting Cream Cheese Icing Recipe from here. It works beautifully!!

Yeah, sounds like a recipe issue. I can never get my recipe (love the taste so I don't want to alter) to be as smooth as I'd like so if the customer insists, then I put that on full coat and just enough of a SMBC (my usual) coat over that so it still looks perfect icon_smile.gif

I use cream cheese icing on my Hummingbird cakes.. I usually cream the butter&CC for about 3-5 min. I also use 1 to 1-1/2cups more sugar than the receipe calls for.. that way it's a lil thicker.
