I have an amazing recipe for pumpkin scones, and everyone raves about them. The only thing I would like to change is to make them a little fluffier. How do I go about doing this without changing the taste of the recipe? I just find that they're a little... Dense maybe? Thanks!
I dont know what your recipe is but I also have an amazing one that I use all the time I just change the fruit or add nuts or whatever. Mine are very moist which I find is the problem with most scones they are very dry. As for fluffines well I dont know how dense yrs are as scones are a little dense it is part of their nature. I use a lot of yogurt in mine and I try to match the flavour yogurt to the fruit i'm using or I use natural yorgurt, I also use 8 tsp of baking powder.

Maybe I should try adding more baking powder?? I think there's only 1 Tbsp as is...
Here's the ingredients:
2 cups all-purpose flour
7 tablespoons granulated sugar ( I usually do half splenda and half sugar)
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
1/2 cup canned pumpkin
3 tablespoons half-and-half
1 large egg ( I usually use just the egg white)
6 tablespoons cold butter
Scones by their nature are not fluffy! I make cinnamon ones pretty often.....I just use my plain scone recipe, and when I am close to being done kneading them, I take a cinnamon sugar mixture and "lay" it across the dough. I then gently fold it a couple more times, then cut them and sprinkle some additional cinnamon sugar on top of them. By doing it this way, there is a sweet cinnamon "stripe" through the scone when you eat it! (hope I explained it properly so it makes sense)
