Are all icings okay to use for outdoor parties lasting about four hours in 50-60 degree weather?

-Whipped Icing

-IMBC

-CC icing

I use SMBC. In another post I mentioned that this is best served at room Temperature. I drop cakes off 4-6 hours before the event.

Thank you. But will CC really go bad after being out for a couple of hours? Or whipping cream or something like that? Is there any info on the temperatures at which they should be for best-taste or something?

That is quite cool weather. I have had a cream Cheese carrot cake for fours hours before. There is so much sugar that it can be a preservative.
Whiiping cream should be cool when eaten because it taste best that way.

As far as temps go the reality is that bacteria grows between 40* and 140*.Now we know that all the cold food we consume is not always under 40* degrees right!

In my opinion all meringue buttercreams are best served at room temp. Whipping cream can come out at anytime because it stays the same texture.

Don't be too freaked out over temps and such.There are major factors that go into making someone sick and there likelyhood is low.

There is a big E coli scare where we live. And E coli is one of those things past on by people or animals. It is not a temperature thing as some think.
