I see a lot of wonderful recipes on this site for fillings and frostings....of course they all contain dairy of some sort, cream cheese, whipping cream, whatever. How do I know based on a recipe if I have to refrigerate the cake once I fill it with whatever recipe I choose? I don't like to refrigerate fondant cakes due to sweating, but I don't want to poison my guests by serving a filled cake that's been at room temp since decorating that morning. Thanks CCers!

Whether or not a frosting or filling requires refrigeration depends on the amount of sugar in the recipe - because sugar is a preservative. This thread at baking911.com is very, very helpful in explaining these things (registration required):

Here's a handy safe storage chart for common frostings and fillings:

P.S. The thread kelleym posted was just until recently not a member-only section. (Has a recipe for shelf stable cream cheese icing.)
