Help!! What Am I Doing Wrong?

icon_cry.gif I need help fast. I am making cupcakes and they aare coming out flat! When I first take them out they are nice and rounded on the top and it is like they fall icon_cry.gif I have to do 48 for tomorrow. I tried filling the them 1/2 full and 2/3 full and it makes no difference. What am I doing wrong? Thanks for any help or suggestions anybody can give me.

are you baking them long enough? Maybe they're still doughy in the middle and fall? Is it a from scratch recipe? Maybe your soda or powder is old? If it's a mix, I'm sorry I don't have any more ideas.

I bake from scratch so that is all I really know about. The recipe I use called for baking powder only. Well, when I would bake cakes or cupckaes with it they would look great when I took them out of the oven, but shrink and look weak when cooled. The recipe for my chocolate cake had both baking powder and soda and I noticed that it always rose better and stayed nice and tall, so I started adding soda as well to my other cakes and voila it worked. I use about the same amount of soda as powder in mine. Hope this helps

If you are using a scratch recipe, try using self rising flour... that seems to make a fluffier cake when I use it. Just a thought. Also make sure your oven is up to temp and that you are baking them long enough. Don't know what else to suggest! Good luck!!!
