Anyone Have This German Cookie Recipe???...

My MIL and her aunt make these and I was wondering if anyone had the recipe. They are called vanilla apricot cookies (I think). Anyway, you use a linzer cutter and there are two (sort of sugar cookie like) pieces that get sandwiched together with apricot jam in the middle. Then sprinkled with powdered sug. Can anyone help? Thanks a bunch!!

Linzer (torte) cookies are Austrian in origin. They can be filled with any flavor of preserves.

BTW, my grandpa was Austrian, LOVE this cookies! Remind me of when I was little!!!

I know they don't have any blanched anything in them.... I think I will try the last recipe with vanilla ext. instead of orange... sounds pretty close... closer than the other recipes I have been looking at.... Always a pleasure JanH!!!

I found this one a while ago. My family loves them.

1 cup sugar
1 1/4 cups butter
2 1/4 cups blanched almonds, ground
2 teaspoons vanilla
3 1/4 cups sifted A/P flour
apricot jam
powdered sugar

Beat sugar and butter together until light and fluffy. Beat in almonds and vanilla. Add flour. Knead until smooth. Roll out dough on a lightly floured cutting board till the dough is about 1/8 or 1/4 inch thick. Butter and flour your cookie sheet . Bake @ 325 for about 15 minutes, or until golden. Take cookies off the baking sheet. Spread half the cookies with apricot jam. Top with the remaining cookies, dip the edges into powdered sugar.

the Lindzer Torte and the cookie are 2 diff things...the Torte is like a pie with a short dough crust and lattice..and the cookie..is well..


YUMMMMMMMMMMMY! lol

taditionally made with raspberry jam or jelly..can be made with apricot..

this is my absolute favorite cookie!!!

Well Oreo's before they made them healthy and Chips Ahoy before they got all AH OYIE..lol

edited to add...

I usually thin down my raspberry jam , I use both seeded and seedless..with a little raspberry liq. That's the "RISQUE" touch..lol
