Does anyone know the average time a cake that has a filling or icing that requires refridgeration can sit out before you have to worry about getting people sick. icon_cry.gif Let's say if it is in normal air conditioned place. I know the time probably shortens if you are outside and it is hot. Or what if you live up north and it's inside a heated house...does that shorten the time?

It depends on what kind of filling it has and the ingredients in the frosting. If it contains no perishable ingredients (butter, milk) in the frosting it can sit out for a couple of days. I've had personal cakes on my counter for a week with no ill results, though I would never give it to a customer that way. I do cover with a cake carrier, too. I don't know on frostings & fillings with perishable ingredients.
