Ok I did a snowman cake this AM for a friend and used the cake mix extender bc I wanted some extra cupcakes too. I put my batter in the mold and than did up my few cupcakes. I baked and it seemed to cook quicker on teh edges and slowly in the middle. Any suggestions? We already know our oven needs to be replaced and are working on it. I have already made a few other cakes and not had a problem with the cake cooking. I also didn't use my cake release I used criscos spray with flour, I think that maybe the problem too! But I had the same problem with the cupcakes I did they cooked the same way the cake did. I have to due up two baptism cakes for sunday and have already planned on making the cakes at my friends house for safety reasons of the cake not messing up. I am going to do another cake I need for friday for my niece's school party today and see how it comes out. Questions
1 do you think it was the cake mix extender?
2 do you think it was the criscospray with flour?
3 I can just wrap it in sran wrap and it will be good to ice on thursday evening right? Or should I freeze it, never did this before!
4 my friend I am doing the baptism cakes for on sunday wants to know how much I charge for the cakes. I told her that I wanted her to be the judge but question is what if she only pays a little and it is an insult to my work? Do I take the money and run? I have been searching out easy decoration for the cakes and think I came acrossed something over on wiltons site. Help with your opinions and suggestions PLEASE!!!

I'm not an expert on cake extender yet, as I've only used it once, but I didn't have a problem with it. As far as the Crisco spray - I stopped using it because my cakes seemed to get a harder crust on the edges. I'm not sure what it does to the cakes, but that hard edge is unappealing to me so I'm back to greasing and flouring. I do bake my cakes ahead of time and freeze them (because of time constraints). I wrap them really well in Saran wrap, and then set them out about an hour before decorating. They always turn out moist and yummy!

I love the cake mix extender recipe and never had a problem with it baking to slow or uneven. I would grease and flour, never used the spray. I would freeze the cake too. As far pricing what size will it be and what are you doing to the cake? Goodluck and send thhose pics of it. icon_smile.gif

Well I have the wilton cross mold pan so I suggested that for her and she agreed. As far as decorating it I think I will use the design that they have on the wilton site that you trace it and place it, since I am fairly new but I want something to knock her socks off! You know what I mean?

Well I would say make it and submit the cake on-line, that is what I did and Igot replies from several professionals on here as to what the charge should be. I mean they respond quickly. There are alot of cross ideas on this site too.

Ok, thanks for the advice! I plan on icing them saturday so I think I should have time to post pics! Wish me luck with me my DAMN oven! I cooked a second cake today and DIDN't use the extender and used the wiltons bake release I have and the second one came out great!
