Cupcake Question

I just took an order for 700 cupcakes for our local hospital's 40th anniversary!!!!!!!!!!!!!!!!!!! icon_lol.gif While I am beyond excited...I have a number of questions...

1. I have never frozen cakes/cupcakes, etc. I want to get a head start on this order and would like to start baking asap. My question is...
will the frozen cupcakes retain their moisture? I want them to taste just as yummy as they do when I bake them for normal orders.

I'm so excited that I can't even remember my other questions! LOL. Any other advice on how to attack this order head-on? They're due on 10/29.

Thanks so much and yeah for me! LOL.

Wow! Congrats! I know a while back there were someone who had an order for 3,000 cupcakes! I can't remember who she was, but maybe if you search the forum for "3,000 cupcakes" you could PM some questions.

Yes, you can freeze them just like freezing cakes. I just bake 60 cupcakes for my daughter fall festival for 10/25.

I baked them, let them cool. I have a rubbermaid container or you can use the glad containers. Put a piece of wax paper in between the cupcakes and lay a piece of wax paper on top in case they top the lid. When ready to use just put container on counter for about 15 minutes and you are ready to decorate.

One more thing make sure you keep a baking soda in the freezer to absorb any food smells that you may not smell.

you sure can!
I bake, let cool, then set on cookie sheet pans and set in freezer for about an hour or more, once firm I place 2 dz cupcakes in one gal ziplock bags.
Stack back in freezer and when I am ready for them I take them out of the freezer, open the sealed end about one inch just to let out the moisture so it doesn't settle on the bottom of the bag and get the wrappers mushy (found this out the hard way)

Enjoy!

You can also frost while frozen and this will help keep the moisture in too.

Congratulations on the order and thanks to all the posters!!! I have to make cupcakes for a few different dates this month (fall festival, halloween parties, bosses day, etc). THANKS AGAIN!
