I just completed the three wilton courses and was asked to make our family a cake for Christmas. So, I've decided to make a basket of poinsettias cake since I love doing the basketweave and think it will make a festive cake. My question is...How do I do this AND make a really tasty cake and frosting? I don't want to just make a regular old cake with buttercream frosting, but all the recipes I've found that look good call for other frostings that I'm afraid I won't be able to do a basketweave with. Any ideas? Thanks!

I've recently discovered the "cake mix extender" recipe found in the recipe section of this site. I use DH with the mix extender and it has been a hit the last 3 cakes I made for parties.

Still haven't found a frosting I like yet though.

Use your class buttercream with 1/2 butter. If that makes it too beige, use a TEENY TINY BIT of violet coloring to counteract the yellow. It is a tad softer than all crisco, but not enough to make a difference unless you have it in a very warm room.

i've done basketweave w/ cream cheese frosting....

the trick was to split frosting between multiple bags and keep extras chilled and switch often.

One thing you can do is make it half shortening and half cream cheese or butter, and add a generous amount of flavoring (I like pure vanilla extract). Instead of water, you can add heavy cream or whipping cream, or even half and half.

It will make a delicious icing that you can still use to decorate. HTH.

P.S. Some buttercreams are very good, like Italian and Swiss, unlike the American version that, IMO, disgusting.
