Is it just me, or is white chocolate hard to melt? I wanted to dip some cake balls in it but it got kind of hard and just would not melt right. I melted regular chocolate chips the other day and it worked perfect.
I used Ghiradelli (sp?) white chocolate chips. TIA! icon_smile.gif

White chocolate chips are pretty low in cocoa butter and in order to get them to melt evenly and to pour nicely, you usually need to add more cocoa butter, paramount crystals, or crisco shortening.

The chips are generally the worst for melting, but even premium white chocolate can be troublesome--and that stuff even needs to be tempered!

Also, melt it slowly at a low temp because it scorches easily.

i used the white almond bark for all my candy this year and it turned out great had no problem with the melting. now last year the chocolate got thick when i made my butter creams. and i was only half way done.

I try to melt a 50/50 mixture of white chocolate chips and almond bark, I also add some crisco shortening to it to help thin it out.

Thank you so much for all your help!! I actually did put paramount crystals in there and they didn't help. I used the Wilton Melting Pot so I thought that would have worked? I think I'm just going to use the almond bark. I'll give that a try today!

Do you think almond bark would be could to dip cake balls in??

I've used my white chocolate/almond bark mixture to dip cake balls in, I also use it to dip my Oreo Cream Cheese Truffles in.
