Your icing won't stay how you want it to, but taste-wise it'll be perfectly fine.

I wrapped cookies yesterday that were almost totally dry, the parts of the cellophane that touched the cookie stuck and made a mess icon_mad.gif , had to re-do several today, save yourself the tears, wait until you are sure they are completely dry. I wish I did.

I'm wondering the same thing - I wish I had an answer. I always wait at least 24 hours for the glaze to dry before I bag the cookies. But sometimes, when I open a bag from a sealed cookie, I get a woof of, well, it's hard to describe, but it smells like play doh. It tastes extra soft, too. This just happened last night, so I let the cookie sit out over night and today it tasted perfect.

No one could ever guess how many little things there are to fret over in this business.

Wondering if anyone else who does cookies in volume has some insight into this question.
