My husband's favorite cake, he insists on coconut icing to go with his. I just mix coconut into the buttercream for the filling.

I use this recipe from food network, it's simple but good and everyone loves the taste.

When I made Red Velvet, I iced it with regular buttercream but I added Cheese Cake Flavor by LorAnn Gourmet Oils. It is fabulous... icon_smile.gif

Here is my recipe. It is fantastic. I usually double this for a 3 layer cake.

1 8 oz. package cream cheese, softened
1/2 c. better, softened
1 (16 oz) box powdered sugar, sifted
1 tsp. vanilla extract

Beat cream cheese and butter at medium speed until smooth. Gradually add powdered sugar, beating at low until ligt and fluffy. Stir in vanilla.

Yield: 3cups

You know what is REALLY good on red velvet cake? German Chocolate cake icing..you know, the stuff with coconut and pecans!

I use the crusting cream cheese frosting posted here for my red velvet when requested. Also use double fudge frosting.
