Fresh White Breadcrumbs

Hi all

I'm planning to make a Christmas pudding and one of the ingredients required is fresh white breadcrumbs. A few questions:

1. Do I need to toast the bread before processing it or do I just process 1-2 days old bread without needing to toast it?

2. How fine should I process it?

IMHO fresh white bread crumbs is just that, fresh bread that is crumbled not processed or toasted. The bread will soak up the liquid better and not have a toasted taste to it. I have have seen the bread pudding done with the edges sliced off and used that way not crumbled. HTH
