i am a little frustrated with the way my luck has been when working with chocolate cakes! i am working on a cake now and i am sweating bullets!!

is there a chocolate cake recipe out there that is delicious, moist yet firm when carving? i have another chocolate cake to make next weekend.

when i crumb coat the choco cake, i put it in the fridge to set up faster and i still get crumbs when i frost it!! icon_cry.gif what am i doing wrong?

another thing is it easy to cover a round rice krispie ball with fondant?

HELP!!!

you poor thing! i've been there done that...i even swore off chocolate cakes for awhile....
but i tried Alton Brown's Fudge Cake recipe....and all is right in my world. he claims that it mimics Ding Dong's...i agree!

i'll check for a link,

it's amazingly moist....but yikes! i've never carved it....

let's see what our resourceful CCers come up with....

I sure wish I could help, I'm in the same boat as you. EVERY choc cake, what a mess!!!!!!!! I did a choc Jack Daniels bottle today icon_mad.gif . I might give that recipe a try..thanks sally.

After carving a chocolate cake, I always do a crumb coat before frosting. It takes care of all the crumbs!! HTH icon_smile.gif
