How long can an un-iced cake stay in the freezer? Also, can I freeze a cake if I put buttercream between the layers and crumb coat it?

I'm with MHill on this one -- I've been in this situation a lot, as I have a full-time job separate from my cake decorating. I find that sometimes freezing the cake at some point in the process is the only way I can complete it in time!
I'm a buttercream fan, and I've frozen just-baked cakes, crumb-coated cakes, and fully-decorated cakes, and they've all come out delicious. I find it actually helps keep them moist. I don't freeze fondant, though, and I've never used MMF. I take the buttercream-iced cake out of the freezer and let it sit a bit, then add the fondant.
I'd suggest doing a "test freeze" on a cake and see how it works for you. I tried it and experienced no problems in taste or texture. I certainly prefer to not have to freeze my cakes, but when I do have to, I don't worry about it anymore!

Im going to try to ice and freeze it because I'm making a big cake for New Year's and have to work that week and can't do it all the night before.
So I'm assuming that you can freeze it for at least a week?
I will try like you said and leave it out a little while and then add the fondant, I too think the fondant will crack if you freeze it.
No problem freezing cakes..... just make SURE you wrap it REALLY well, and leave the wrapping on until it is COMPLETELY thawed.....Don't put fondant on a partially frozen cake, because it may "weep", and the fondant will be ruined by the excess moisture........ It can still be cold though...
