Can I make my cookie dough now for baking mid week next week and wrap and refrigerate or should I freeze it ?

roll it out between sheets of either parchment or plastic wrap, place on a flat cookie sheet and it will keep in the refrigerator for two weeks like that. icon_smile.gif

And remember, if you roll it out between the sheets of parchment (or plastic wrap), you can just pull it out of the frig and stamp the cookies and go right into the over -- no rerolling necessary. icon_biggrin.gif

I was going to make drop cookies too so didnt know if I should freeze or just refrigerate.

Drop cookie dough can be put in an airtight plastic container and will last about three weeks in the frig. If there's any question, put them in the crisper or in the back of the frig, the coolest parts of the frig and you should be fine. Just don't forget it's there... (don't ask me how I know that...) icon_wink.gif
