Is it just me or does red velvet cake always come out kind of flat???? I baked a second recipe just to make sure I didn't forget an ingredient . . . but nope . . . both my 9" rounds are less than 1/2 inch high!!!! I can't even level them because it will take more of the cake than I can afford to lose!!!!

Is this normal?

I've never did a homemade red velvet cake. I always use duncan hines brand with no probelms.

DEFINITELY not the norm. I have done both homemade and Duncan Hines. I don't know what recipe you are using, however, I use Cake Flour to make mine, not self rising. Sorry, wish I could be more help!

It seems like something is definitely wrong with your recipe. I bake red velvet quite often and it bakes up just like my other cakes. If this is the first time you have used this recipe, I would search for a different one.

I don't have to do a lot of leveling on my "scratch" cakes. Right out of the oven I take a paper towel that has been lightly sprayed with no-stick spray and press down lightly on the cake. It really works!
