This is my first wedding cake. It is for my sister and I am also the Matron of Honor. The wedding is Saturday, but there is the rehearsal dinner and the hair and the make-up and the dress fitting etc. I baked all of the cakes on Monday and put them in the freezer. They are on the counter thawing right now(Wed). I am going to fill them and crumb coat them tonight. Tomorrow (Thurs.) I will decorate them and deliver them on Friday(70 miles away). I will probably have to set them up on Saturday morning too. What do you all think of this time-line. Do you think the cakes will still be good?

You know you can ice the frozen, its actually easier. I would probably wait until tomorrow to start on them.

Sounds great but Saturday morning will be tricky...get up early to get the cake thing complete and out of your way...there will be a lot of girl stuff to engage in (hair, makeup, giggle time...) and you won't want the cake nagging you lol...have a great time@ the wedding..you'll have earned it!

So you decorate them frozen or just crumb coat them?

I have done cakes to crumb coated, filled and put the final icing on and smoothed, then froze... take them out of the freezer the night before transporting so they defrost slowly in a refrigerator, and they are ready for decorating.... the result was very delicious moist cake and I recommend this if you have the freezer space....and fridge space. I even boxed and saran wrapped the finished layers for transporting with rubber mats inside the box and this worked great leaving me the minimum to do for set up and decorating. I suppose some of the decorating could be done ahead of time too and then froze.
