When I make a red velvet cake from scratch, it sinks in the middle everytime. What makes that happen? I want to make one for Christmas and I really don't want to fill the sink hole with frosting. HELP!!!! icon_smile.gif

I baked my first Velvet Cake last week. I used the recipe I found in Cake Central and followed it to a T. The problem I had was the cake was way TOO CRUMBY. Is this normal?

I had a couple of cakes sink in the middle after I took them out of the oven. They were not scratch cakes but doctored mixes. I decreased the amount of oil to half and havent had the problem since. HTH
