Handling Larger Cakes.... Please Help
Decorating By katharry Updated 15 Dec 2006 , 2:32am by sweet_as_tisse
I am about to start decorating a cake today and it is two 12 inch hexagon shaped vanilla cakes (that is big for me). I will stack them on top of each other with buttercream in the middle.
Is there a safe way to do this to ensure you get the top cake evenly onto the bottom cake (so they match up, as Im thinking if I miss the target, because it will land on the buttercream it would be a nightmare to shift I dont have a cake lifter, but though someone out in CC land will be able to help me (please).
I am trembling in terror ![]()

please advise.

Just a thought, but what if you use a crusting b'cream on top of the 1st cake and once it set, add some powdered sugar on top. Then cut a hex board and put it on top of the 1st cake. Put your second hex on top of the first on the board. Don't forget your supports. Just keep in mind though, even if you use the same exact pan for both cakes, the chances are better than good that they won't be EXACTLY the same size. You might have to freeze or chill after stacked and then carve to even out your sides. HTH Good luck!

I would start with cold cakes....that way you can move the top one around to get it as lined up as possible. Then I would freeze for about an hour and cut the sides to make them perfect if you have to. JMO.
I like to put together large layers while they're frozen. It's so much easier to just pick it up and plop it on there without having to worry about positioning or cracking the layer. But that's just me....I tend to assemble and carve my cakes frozen and then let them sit overnight.
GL!
