If I make a strawberry cake and use pureed (sp?) frozen strawberries mixed with buttercream for a filling, does that need to be refridgerated??

I use the crusting buttercream (viva method) recipe from this site and I never refridgerate my cakes with that but, I am worried about the strawberries. icon_confused.gif

Also, if I use the juice from those strawberries for a syrup to brush on the cake....I've never done that before icon_redface.gif .....how would I make that syrup??

Thank you in advance!!

when in doubt refridgerate it!

As far as the syrup, I would add some sugar and bring to a boil let reduce abit, then cool before spreading on the cake.

Thank you for your reply. I was hoping to not have to refridgerate...I don't have the space for that....I guess I'll come up with something else.

Thanks again.
