Does anyone know the best solution for substituting a proofing box in the home? I can't remember what it is. I think it is preheating and oven and placing a bowl of water and turning the oven off. What are the specific times and temperatures? I'm making Cheese Danishes for Christmas and need to proof the Danishes before baking. Thanks

if this is for casual baking, a nice warm place in your home with a tea towel over the bowl.

If you do them in quantity pm me for directions

I usually boil a pot of water and then sit it on the bottom of the oven. Then put the dough, covered with a wet towel on a rack above it. I don't turn the oven on. The steam and heat are enough warmth for the dough to rise.
