Has anyone ever made fudge before? lol I've started making my fudge to give as gifts for christmas (change of plans last minute lol) The first batch I started it at 10 am and finished it by 10:20 AM. I melted my chocolate and butter until smooth, took off the heat, mixed in the condensed milk and vanilla, and once it was totally smooth and pretty and shinny I added a cup of mini marshmallows to make it my own special way lol. I did this in 2 stages, one with milk chocolate chips and one with semi sweet chocolate chips. I layered them in two layers in the greased pan and spinkled more mm on top for a decorative look, placed the pan in the fridge and it's been in there for about 30-45 minutes and it's not getting hard at all... it's still all wiggly icon_sad.gif. I've started on the second batch making it a little different....

Instead of mixing the mm in the melted chocolate I just sprinkled them over it in the pan and put the bottom layer in the fridge to set while I took a break....

Am I doing something wrong here???? I've never made fudge before and I wanted to do something nice for my husbands co-workers as well as his boss because he just lost his mother yesterday... so I want this to be perfect and delicious... PLEASE HELP!!!!!

what does the recipe say?? I know I have to bring my stuff to a boil and boil until like a soft ball stage. It may be that your not cooking it long enough...

The recipe says melt 1 bag semi sweet chocolate chips with 2 TBS unsalted butter, remove from heat when smooth and metled. Add in one 14 oz can sweetened condensed milk and 1/2 tsp vanilla. Mix until silky smooth. Pour into greased pan and repeat with Milk chocolate chips. Pour over what's already in pan and let firm up. Says nothing about the fridge or anything it's very basic recipe.

I don't remember where I found it but it was called Easy triple chocolate fudge and once you did the layer of semi sweet chocolate, and then the milk chocolate layer, you shaved or chunked white chocolate and pressed gently into the top of it. Instead of that I did marshmallows.... I guess it just needs to sleep in the fridge for a while to become solid enough to cut and package...

Ok Thanks for your help and the recipe link I guess I'll just wait this out and if it's not solid by 4 pm I'll toss it and make cake balls like I originally planned lol

We have always made peanut butter fudge it is great. It is chocolate peanut butter. I would have to call mom for the recipe if you are interested but it is one of those that if you don't cook it just right it doesn't harden.

I do have a chocolate cookbook. Let me look up something and I wil PM you with an easier recipe.

Here is one that I use all the time - never fails!

Chocolate fudge

3 cups sugar
3/4 cup margarine
2/3 cup evaporated milk
1 12-oz. (340 g) package semi-sweet chocolate chips
1 7-oz. (198 g) jar Kraft Marshmallow creme
1 cup chopped nuts
1 tablespoon vanilla

Combine sugar, margarine and milk in heavy 2-1/2 quart saucepan; bring to full rolling bail, stirring constantly. Continue boiling 5 minutes over medium heat, stirring. Remove from heat, stir in chocolate till melted. Add marshmallow creme, nuts & vanilla beat till blended. Pour into greased 13 x 9-inch baking pan. Let cool and cut into 1-inch squares.

That is the same recipe I use it is also on the back of the Marshmallow creme jar. I have never had any problems and everyone loves them.

Ok gang I took out the first batch I made, I heated a knife and cut them after turning out onto a cutting board covered in plastic cling wrap (mistake #1 lol) I cut them, the edge pieces did great!!!! all the way around the entire pan, but the center pieces just turned to marshmallow mush.... So I plated that up and am sitting here with two spoons spooning it into Bon Bon cups with hopes after sitting in the fridge over night it'll do right. I put the remaining ones that held shape back in the fridge to await packaging. I'm not sure how this is going to turn out lol it may be something I just feed to the kids and family and make something else for the work folks lol. It's delicious it's just messy and won't stay hard icon_sad.gif I don't know if it's because it's so hot in here today (crock pot on, fireplace on, heat on....) or if it's just me... maybe I should stick to cakes icon_sad.gif

The fudge I do is the "never fail" fudge recipe found in so many old cookbooks. No pun intended, but it "never fails."

INGREDIENTS
2/3 cup evaporated milk
1 2/3 cups white sugar
1/2 teaspoon salt
16 large marshmallows
1 cup semisweet chocolate chips
1 teaspoon vanilla extract
1/2 cup chopped walnuts
DIRECTIONS
In a medium saucepan over medium heat, combine evaporated milk, sugar and salt. Bring to a boil, then remove from heat and stir in marshmallows, chocolate chips, vanilla and nuts until marshmallows are melted. Beat it like mad for a minute or so. It's going to lighten in color a bit here. Pour into an 8x8 inch dish. Let cool completely before cutting into squares. Throw it in the fridge for a while! Like 4 hours or so.

Knox hun I was so upset I looked at that puddle of mush and I took a spoon and dove in then I said WAIT NO!!!! I'll gain a ton! But wait I've got these little thingies lemme see what I can do with them lol. So needless to say there is a platter full of lil bon bon cups of fudge I plan to call Fudge Samplers if they turn out right lol that's about all they are is a sample size lol. But yummy. Too rich for me though icon_sad.gif

One question: Did the original recipe call for the mini marshmallows? I think MAYBE (and this comes from one that CONTINUALLY changes recipes to make them my own) the extra marshmallows did it. It's a solid vs. liquid concentration thing. (ref. Alton Brown Food Network) Also, when I have made layered fudge in the past I always refrigerate the 1st layer BEFORE pouring the second. It could be that it just needed overnight in the fridge. At the end of the day, some days are GOOD candy days and some are not! LOL

Having said that I'm off to buy the ingredients for CANDY DAYS myself (275 lbs. of fudge, p-nut butter bon bons, Martha Washingtons, peppermint patties and more)!

OMG!!!!!@275 lbs of fudge!!!!!

No the original recipe didn't call for the marshmallows but some very nice person, patticakes, has sent me some tried and true recipes even her child can make properly so I'm going to go try them and hopefully something will come of this long day of fudgeyness! lmao
