How Soon Can I Bake My Cakes For Saturday?

I would like to bake my cakes as soon as possible for a three tiered anniversary cake. I have guests coming into town early Friday and I would like to get as much done as I can before they come because they will only be here until Sunday. Could I get away with baking on Wednesday and decorating on Thursday and refrigerating the cakes?
My baking day is on Wed when I have cakes due on the weekends I just freeze them. Actually I baked tonight its a very busy week and I won't be able to bake tomorrow (Wed) takes the stress off.
