I just was told by my DH that he needs me to make a bunch of goodies for some of his clients for christmas. I bought some decorative boxes, tins and baskets today to do them. I just don't know what to make to go in them???? I need something that tastes amazing since these are for my DH's best clients. Any ideas?

Thanks everyone! I'm making choc.-walnut cookies, cake balls, the cookies janH suggested, fudge, cinn. popcorn, choc. dipped pretzels, almond truffles, and whatever else I can think of. I never have had almond roca--but I'll look on-line for the recipe. Thanks again if anyone has any more ideas feel free to add them!

this is a pretty good recipe. The one i always use. really easy.

Recipe:Almond Roca
Ingredients:
1 cup Butter
1 cup Sugar
3 tbsp Water
1 tsp Light corn syrup
1 cup Fine chop toasted almonds
1 cup Milk-chocolate chips

Melt the butter in a saucepan. Add the
sugar, water, and corn syrup. Cook the
mixture over med. heat, stirring. When the
sugar dissolves and the mixture begins to
boil, raise the heat and bring the mixture to
the soft-crack stage. It will be
light brown in color, and syrup will separate
into threads that are not brittle when
dribbled into cold water. Quickly stir in 1/2
cup chopped almonds. Immediately pour the
mixture onto an ungreased baking sheet. Wait
2 or 3 minutes for the candy surface to firm,
then sprinkle on the chocolate chips. In a
few minutes, when the chips have softened,
spread the chocolate evenly over the surface.
Sprinkle the remaining almonds over the
melted chocolate. When the chocolate
hardens, crack the candy into pieces.

On Thursday my DH tell me "oh, I need a basket for tomorrow" icon_eek.gif so I ended up staying up till 3:15am and got up at 6:30 am for school. GRRR, I need more notice than that! I didnt have enough time to make everything I wanted to, but I did get a lot done for the short notice. I made peppermint bark, dipped oreos, 2 different kinds of cake balls, spiced nuts, 2 different kinds of cookies and cinn. popcorn. I wanted to make a cake and some other items but there was just no time left so that's what I managed to get done. I hope next week is easier since I know more when items are needed. Thanks again to everyone, I plan on making all of your suggestions for his other clients this week. thumbs_up.gif

My favorite item to make this time of year is Hawaiian Snowballs. I mass produce sugar cookie dough then divide it out and add in a few new igredients to make a whole other treat. I just eyeball my amounts, sorry! They are very forgiving.

Sugar cookie dough
Dried pineapple, diced(as best you can get it. it is quite difficult)
Macadamia Nuts, chopped(to smithereens. I use my Pampered Chef food chopper, works like a charm)

Mix pineapple with chopped nuts.(this will help keep the pineapple from sticking to one another) Knead mixture into sugar cookie dough. Roll into bite size balls. Bake at 350 degrees for about 12-16 minutes, until the balls just start to brown. Let stand for 5-7 minutes, place into bowl of powdered sugar and roll them around. Cool completely.
