HELP! icon_surprised.gif I need to make a cake by this Friday and tonight is really the only night I have available to do it. My question is, can I do a fondant covered cake on Tuesday and it stay good until Friday? Do I put it in the fridge when I'm done - or can it stay out?

Once the cake is covered in fondant it should stay pretty fresh (though it may be pushing it). What kind of fondant are you using it. Satin Ice can definitely be refridgerated.

If you are using mmf you don't need to refridgerate it. I have been told a cake covered in mmf will be good sitting out for about 5 days, UNLESS you have a milk based filling. Good Luck!!
