Of the poinsettias that I've seen so far, they are created with royal icing and a lily nail. I can do that, but I would rather them be soft and edible (not break-your-teeth-crunchy) if at all possible. Can anyone offer any suggestions?

With a leaf tip. Just make four long petals, and insert smaller ones in between them. They should be somewhat elongated. Then you can use a circular tip to make four yellow dots in the middle. HTH.
