I am making two kinds of cake balls for my husbands coctail party tonight with colleagues. I made two kinds of cake balls. Chocolate cake with coconut creamer, and chopped almonds, and shredded coconut in the cake mixture. I dipped them in chocolate and sprinkled a tiny bit of coconut on top to give a clue as to what was inside. I also made chocolate cake with the mocha peppermint creamer with Andee's baking chip pieces added to cake mixture. Dipped those in chocolate then drizzled white chocolate tinted mint green to reveal what was inside those. They are delicious and I think open up a whole new Pandora's box of flavor combinations of cake balls.

Thought I would share.

I love that combo for the coconut choc. ones. I just made some with chocolate cake flavored them with raspberry syrup and added coconut and chopped toasted walnuts dipped in chocolate. The mint ones sound great and like something I need to try!!
