Some Ingredients Unavailable

I live in Italy and some ingredients are just not available here. Specifically, cream of tartar, merengue powder and vegetable shortening.
I have limited myself to recipes without these ingredients, but there are some recipes on this site that I would love to try. Does anyone have any suggestions for substitutions or should I just give up?

meringue powder is powdered egg whites, so you could subsitute fresh egg whites. (i have to look up the measurements for exchange) Cream of tartar, probably goes by some other name there. Vegetable shortening, I know in England its called trex so what its called where you are i'm not sure. Depending on the recipe you might be able to subsitute either margarine or butter, but be aware that these ingredients have a higher water content then shortening.

You can get all of these things on Amazon.com, and international shipping is available (depending on the merchant). I am unaware of any substitution for shortening that works as well - it's a unique thing - but it may well be called something else outside the States. Meringue powder varies by brand, but 2 tsp meringue powder plus 2 tbsp water is approximately equal to 1 egg white.
