I don't even know anything about heating cores so I figured I'd ask what size I need to start using it at.

Thanks!

No. Not even the 12" or 14" ones either.

I really dont know either. The biggest I have gone is 12". The only thing I used was a flower nail in the center.

I don't use one for a 10" x 2" high but I did use one for the 10" x 3" high pans...

Instead of an official heating core, something I learned from CC is that you can use a flower nail (sprayed with non-stick and disc side to the bottom of the pan) and it acts like a heating core...works very, very well!
It is much easier to use than a heating core and no mess....just hang on to the flower nail when you pour your batter in because it tends to skate a bit...
With really big pans, use 2 flower nails.

I have never used a heating core but I ALWAYS use the flower nail technique in all of my cakes just to be safe. It can only help, not hurt!

I use baking strips and have never used a core even on 16" round pans.

What exactly does the nail do?

I don't use the core for anything...not even the 3D's pans. They turn out wonderful without them. I do use the baking stipes though. and that is it.
Hopes that helps a bit. Nicole
