I have made royal icing several times, but was wondering how long or IF it would stay good for a period of time. Is it something you can make and then store in the fridge?? Thanks

I find royal icing best when made the night before or the day of use. In theory royal icing can keep for a week, but it never stays good for me past three days. It then gets too whippy and mushy and loses any firmness, even when I rebeat it and add more sugar.

Royal icing stores best at room temp sealed in an airtight (prefferably non plastic) container. It dries out faster in the fridge.

Thanks! I have to make a tiera for a cake this weekend. I was going to start on the tiera today to be sure I could do it. I wa sgoing to store the rest of the icing in case it breaks and the cake has little royal icing dot s on it also.
