I made a carrot cake yesterday for a co-worker of my husband. It was iced with the diabetic cream cheese icing recipe that I found on CC and RI flowers. It looked fine yesterday and I kept it in the fridge overnight. This morning my husband took it to work. I didn't see it, but he says there is an oily goo seeping around the RI flowers and it doesn't look very nice. I am not going to charge her for it at all, but I was wondering if anyone knows why this is happening. Some of the RI flowers are about 1 month old, but the others I only made last week.
Royal Icing starts to absorb the shortening and grease from the buttercream and it breaks down. Since it was stored overnight in the refrigerator, it had alot of time to absorb. Also, condensation from the refrigerator probably contributed to it as well.
Can you just pipe over the seeping with some leaves or something? I would not give the cake away. Just be honest and tell her that is what royal icing does.
