Hi everyone! I just took the Wilton candy class and our instructor told us about the Wilton Creme Fillings to make truffles with....however, as far as I know they are discontinued. Does anyone know for sure? If they are discontinued....what do some of you use to fill your chocolates? Thanks! icon_sad.gif

you can make your own fillings using fondant sugar, butter and candy flavorings... it's not too hard, but it's kind of a pain in the behind.
i've bought candy fillings off of ebay that are FANTASTIC! if you want the name of the seller, PM me and i can send it to you... also i can send the recipe for the centers with fondant sugar.

I get all of my candy fillings at a local store "Candyland Crafts", you can order from them online though.

My favorite fillings are almost a thick, flavored fudge. This recipe is very silimar. http://recipes.epicurean.com/recipe/22239/chocolate-raspberry-truffles.html

Melt, mix, refrigerate 2 hrs. I scoop with a melon baller or tiny cookie scoop, then dip. For other flavors, omit raspberry jam and add a liqueur or extract in the flavor you want. You can also add nuts, raisins, etc. It's a basic fudge/ganache recipe, easy to work with and oh so many ideas!

This guy has a TON of truffle recipes he has created or found. Like he says, his aren't pretty, but they're good! Look for the tiramisu truffles.
