icon_biggrin.gif I've been hunting all over for a reliable WHITE CHOCOLATE cake recipe but haven't found any that seem worth making. Most of the recipes have bad reviews claiming that the end product doesn't have a white chocolate taste. Is the SOLUTION to just ADD MORE CHOCOLATE??

I just bought some falvores from capella coffee and they had white chocolate flavor. maybe you can try that. The ones that I ordered are smelling heavenly but I haven;t tried them but I will soon!!

The Cake Doctor has a "white chocolate wedding cake" and it was good. If you don't need it immediately, I can post it tomorrow after I get home from school .. I spend the night with my grandma every other sunday.

Here it is:

CAKE:
6 ounces white chocolate
5 tablespoons butter, cut into pieces
1 package plain white cake mix
1 1/4 cup milk or water
3 large eggs
2 teaspoons pure vanilla extract

Preheat oven to 350. Grease and flour pans as normal (it says to do a 15 1/4 by 10 1/2 sheet pan, but I think I used a 9 x 13).

Place white chocolate and butter in microwave-safe bowl and microwave until butter has melted, 1 minute. Stir until white chocolate is thoroughly melted and mixture is smooth.

Place cake mix, eggs, milk, vanilla, and melted white chocolate mixture into a large mixing bowl. Blend on low for 1 minute, stop mixer, scrape bowl with rubber spatula, and beat on medium 2 more minutes. Pour batter into pan. Bake about 28-32 minutes. Cool on rack for 20 minutes.

WHITE CHOCOLATE CREAM CHEESE FROSTING:
6 ounces white chocolate, coarsely chopped
1 package (8 ounces) cream cheese at room temperature
1/2 stick butter at room temperature
1 teaspoon pure vanilla extract
3 cups powdered sugar, sifted

Place white chocolate in small glass bowl in microwave 1 minute. Remove bowl and stir until smooth. Set aside to cool.

Place cream cheese and butter in large mixing bowl. Beat on low until well combined, 30 seconds. Add melted white chocolate and blend on low until combined, 30 seconds. Add vanilla and 2 1/2 cups powdered sugar and blend on low until sugar is incorporated, 30 seconds more. Add more sugar as needed to make frosting spreadable. Increase mixer speed to medium and beat until frosting is fluffy, 1 minute.

*When cake has cooled, invert to serving platter. Spread frosting over top and sides of cake. (I just left mine in the pan and iced the top because it was for family).

I really don't remember much about this cake, but I do think it tasted like white chocolate. Hope this helps!
