Well, I premade my buttercream roses for my class on Tuesday night, as requested by my teacher.

Right now they're in the refrigerator.

Would it be safe to store them in the freezer and then take them right from the freezer to class in two days?

Thanks a million for all of your help. I don't know what I would do without the lovely people who participate on these forums.

Yes, they should be fine that way. Sometimes they are easier to put on a cake when they are still a little bit frozen.

I store BC roses in the freezer for a week or two. (I don't know how long they would keep looking good, so I don't keep them longer than that.)

The only problem I have had was when I put flowers straight from the freezer onto a cake, when it was very humid out. Condensation formed on the roses and made little spots on the petals.

I have always stored mine in the fridge. The freezer makes them nice & stiff but they tend to get more condensation when I freeze them. Although, I live in Houston where it's super humid most of the time!
