Royal Vs Buttercream

I have seen alot of beautiful scroll work and they said they used royal icing. what is the difference between using royal over buttercream when doing scrolls? thanks

I think most people use royal icing to pipe scrollwork over fondant, and buttercream over buttercream. I normally use buttercream over both, unless it's for competitions. On the cakes you particularly like, are they using fondant for a covering?

I use buttercream for everything ... icing, borders, dots, scrolls, roses, other flowers, etc.

thanks for sharing. and Deanna, I know that one cake was covered in buttercream but used royal icing scrolls, that is why I wondered if there was a certain reason why? thanks for your input. icon_biggrin.gif
