I bet you guys are getting tired of me needing help with fillings! haha! I've been racking my little brain with recipes all day and I haven't gotten anywhere - so I'm coming to you for help!! I need some suggestions for a filling for a holiday cake that I'm making for my husband to take to work. I'd like something kind of unique and sort of rich but not too difficult. It's for a dark chocolate cake and I don't want to use anything too liquid-y
like preserves, etc. Also, it needs to be a filling that doesn't have to be kept in the fridge.... aahhh.. please help! TIA
How about a white chocolate mousse with chopped marischino cherries in it. That would look pretty and taste great with choc. cake too!
does mousse not have to be left in the fridge?
Why not pulverise candy canes and add some mint extract to buttercream?
I guess real mousse would only be good for a couple hours and would then need refrigerated-I defer to the experts on that. You could make a faux mousse. I've mixed white chocolate into buttercream and whipped it until nice and light, or you may be able to do the same with Rich's Bettercreme- never tried that- but any light fluffy icing with candy pieces or cherry pieces mixed in would look nice and festive.
