I'm no expert but I never freeze or refrigerate my cakes. If the cake is due on Friday morning, I bake and decorate it Thursday. If you bake and ice the cake with buttercream, I believe it will keep the cake fresh/moist for a couple of days.
The more experienced decorators here will definitely be the answer to your questions thumbs_up.gif

Hi Brenda,
Welcome to CC!!
You can bake a cake a day or two in advance if you plan on storing in the fridge... just make sure to wrap it very well in plastic wrap so it doesn't dry out.
OR... you can bake your cake, wrap it well and freeze it. It can be frozen for a couple of weeks just make sure it's wrapped really well and that you thaw it out before you start to ice it.
Have fun!
