Truffle Question

I made these truffles yesterday:

And they were just not what I imagined truffles to look like. They were very light and foamy, kind of like mousse. The didn't really firm up in the freezer, so it was super messy to try to roll them into balls. When I tried dipping them in chocolate melts, the truffle mixture kind of soaked into the chocolate and made it too firm to dip anything in!
If someone could look at the recipe and tell me if anything looks off about it, I would appreciate it.
They taste good though!

To me it seems like a little too much liquid. I always use1
lb. chocolate in small pieces to
1 C. whipping cream
sometimes I had a little butter and flavor but not alot.

looks like to much liquid to me too. i don't use that much in mine.

That was my thought too, because I had a Martha Stewart recipe that had all the same ingredients, but the chocolate was 1 pd as well. Dang.

ya know i don't think that it's too much liquid, ladies come on, it's definitely NOT enough chocolate. LOL

This is the first recipe I've seen that calls for granulated sugar! Agree wil chaptips....more chocolate icon_biggrin.gif
Here is a devine recipe for truffles, I imagine the coverture is rather expensive...ohhhh I bet the taste is to die for though.
