I Really Need To Finish These Cakes Today. I Need Advice...

I have two cakes that have to be done by Saturday morning. One will be eaten around 2 or 3 on Saturday. The other on Sunday around lunch.

All the cakes are baked and in the freezer. Can I go ahead and ice them today (Thursday) and will they still be good by Sat & Sun. I used the White sour cream cake recipes from here and will be frosting with Tami's buttercream icing.

I can't work on them at all tomorrow as I will be out of town until tomorrow night.

I want them to taste fresh. The one for Sunday is my first paid project.

Help!

I think you will be fine. I have baked a cake one day, decorated it the next, then it sat in the fridge for 3 more days before we ate it. It was, in my opinion, still fresh and moist.

I think you should be fine...I baked a cake on Friday and didn't freeze it just put it in a seal container then I iced and decorated on Monday and it didn't get eaten until Tuesday or Wednesday.
