Chocolate Cake Mix Extender

I have tried the cake mix extender using yogurt in a white cake and it went well.

Would I add some cocoa powder to it to put it with a chocolate cake? If so, how much?

I use 1 oz. of premelted baking chocolate. When using cocoa, it's 3T. cocoa to, I think, 1 T. oil. It should give the correct amount on the side of the cocoa can.

When I make a chocolate cake with the extender recipe, I always use cocoa to replace 1/3 of however much flour the recipe itself calls for. It makes a better chocolate cake that way. (just using flour and no cocoa makes it too "light" of a chocolate cake for my taste) For example: if it calls for 1 cup of flour, I would use 2/3 cup flour and 1/3 cup cocoa. Hope that helps!

I usually add a couple squirts of Hersey's chocolate syrup.

I made chocolate cupcakes and used the extender with some cocoa in it. Didn't add extra oil and they turned out really great. Gave me about 9 extra cupcakes if I remember correctly.

I do the same as above...2/3c flour and 1/3c cocoa. I also replace the water with buttermilk and the sour cream with pudding mix.

Thanks so much for such quick replies. I need to get going on some Christmas cakes for the grand kid's teachers because they get out for vacation soon.

Can someone please explain what is the extender icon_redface.gif is it something you buy, or something you mix Im new here and I bake a lot of chocolate cakes if it will help me get more batter Im in icon_biggrin.gif . Boy, have I learned stuff just reading all the posts THANK YOU !! icon_lol.gif

The extender recipes are ingredients you add to a regular box cake mix to make it taste a little more like scratch. Go to the 'recipes' at the top of the page, type in 'extender' in the 'search' box. I never knew about it till this site and now, I will NEVER make another box cake without it!!!

Some other new ideas can be found by checking out The Cake Mix Doctor set of cookbooks by Anne Byrn. I have gotten lots of clues by reading her books.

Character pans come out looking so much nicer if you use an extender. Just gives them that extra bit of height to make them look nicer.
