Need Brown Sugar Cookie Dough

I usually make the roll out cookies, but would like to make some gingerbread men, and would like them brown. Would it be easier to add some brown coloring, or is there a recipe that comes out brown? Could I maybe subsitute brown sugar for the sugar?

I found some great cookie recipes on the cookie cutter shop website. Look under the recipe link. I've made the butterscotch gingerbreak folk, the chocolate cut-outs and the cream-cheese cut-outs. I think you might enjoy them. Have fun!! icon_smile.gif

You could use a chocolate cookie recipe the cocoa should make it brown.

I have several huge cookie books so if you have more of an idea of flavor I can look up recipes for you.

Patticakesnc: Thanks for the response. She said she wants a regular sugar cookie, but in the shape of a gingerbread man. I want it to be brown (like a gingerbread man), and I thought I saw a recipe somewhere (can't remember where) that called for brown sugar in the cookie. I wasn't sure if it'd just be easier to add brown coloring.

If she wants the sugar cookies I would do it with tinting it then. The brown sugar really won't make it brown just a tad darker like in a chocolate chip cookie. This way you don't really change the taste either.

Try using using one of the new ultra grain flours they have out now.
I experimented with it recently(I have a picture in my gallery) They come out a little more golden colored.

I know Sam's club carries it and I believe King Arthur has it also.

I'm not sure if using brown sugar would make your cookie soft and more apt to spread.

I made some gingerbread dough the other day and it is light brown and doesn't have molasses in it. It smells more like a spice cookie with a hint of orange.

Gingerbread Boys

1 cup butter, softened
1 1/2 cups white sugar
1 egg
1 1/2 tablespoons orange zest
2 tablespoons dark corn syrup
3 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon salt

DIRECTIONS

1. Cream the butter and the sugar together. Add the egg and mix well. Mix in the orange peel and dark corn syrup. Add the flour, baking soda, cinnamon, ginger, ground cloves and salt, mixing until well combined. Chill dough overnight.
2. Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
3. Roll dough out to 1/4 inch thick and cut into desired shapes. Place cookies 1 inch apart on the prepared pan. Bake at 375 degrees F (190 degrees C) for 10 to 12 minutes."
