I'm new to cake decorating and want to practice on a friend of mine. She is on a diet so I thought about using angelfood cake. Is that a stackable cake? I want to practice using the 3" pans in maybe the 12", 10" and 8" pans. Is this doable and how?

You can stack just about any type of cake. The cakes is not what supports the tiers above it. The dowels and plate system you use is what supports everything.

So it is definitely doable.

Take a look at this article about stacking cakes, and let us know what other questions you have.
