this is a gift to our close friends for their wedding, but just out of curiousity, how much would you charge for this?
a square 5 tier cake with a stem illusion construction, and fresh calla lilies. each a different flavor
12" chocolate mocha cake with whipped chocolate ganache, butter cream and fondant
10" lemon cream cheese cake with seedless fresh raspberry puree and chambord ( a french liquor), buttercream and fondant
8" french vanilla with whipped choc ganache, buttercream and fondant
6" french vanilla with rasp/chambord puree, buttercream, fondant
4" choc mocha/whipped ganache, buttercream, fondant
each tier is 4" high, torted with three layers off fillings, the outside will be decorated with royal swiss dots painted with pearl dust, and have a handful of gumpaste cherry blossoms "falling" over the edges of each tier in addition to the stem illusion and callas, as well as ribbon on the bottom edges of each cake.
also, a 2 tier round (12" and 8" ) strawberry cake with cream cheese icing and piroutte wafer cookies around the edges, wrapped in ribbon, with fresh berries on top.
all together, the supplies will run about $300-350, but includes all ingredients, cake stand hardware and supplies, a new proffesional set of square pans, decorative items for the cake table etc....
how much would you charge if you were selling it?

I have no idea about pricing but I have to say that you are a great friend to be making ALL OF THAT CAKE as a gift. That sounds like an awful lot of work and an awful lot of cake. How big is the wedding? I hope your friends realize how much love and hard work is going into this gift!
I agree with Cupcake, I'd sell it for that, but I guess if it were for "friends" and it cost me about $400.00 to make it, I'd charge $800.00 to account for ALL my labor! ![]()
The Wilton guide gives 210 servings, not including 4" tier. There are a LOT of tiers for that size, and a lot of work. Be careful it is supported really well, it could be very unstable due to height vs width.
At $2/serving, that would only be $420. $500 to account for the extra work. However, that is CHEAP for most decorators. A fair price would be closer to $800-1000.
OK, here is how I price. $3.00 per serving base for fondant covered square cake. Plu $.25 per serving for each layer of filling over one, so $.50 per serving for that. Which would bring the cake to $735.00. Then I'd add $50.00 for the Calla lily display and depending on how many gumpaste flowers $25-50 additional. So $810 for the wedding cake. Then for the other cake probably $4.00 per serving because of the price of the cookies & ribbon. Depending on servings, $200.? So for both cakes I'd charge around $950.00.
As for a present for the bride and groom, if you subtract the pans & other decorator basics, how much are you putting into this cake? I very rarely give a wedding present over $100.00. If you are putting $200.00 into this PLUS your time and energy I would consider mentioning this to them. I've done this before "as a gift," and ended up feeling bitter at the lack of appreciation. PLEASE at least tell them what it is worth and how many hours it will take you so that they can understand what kind of gift it is.
