I was told that you could decorate a frozen cake and it would make it easier so I tried it. The chocolate 1/2 sheet cake was solid as a brick and I did not have any problems with crumbs which was nice, but after it was decorated and started to thaw I saw it--water. Lots and lots of water in the middle of the cake. The angel topper was standing in a lake! Would there be that much condensation from the cake? icon_redface.gif It looked like someone took a glass of water and dumped it on the cake! Lets say it went in the garbage after I blotted up the water carefully with paper towels and served the cupcakes. Has this happened to anyone else?

Wow! Never had that happen. Did you wrap up the cakes really well before freezing them? I always wrap my cakes up real tight and then freeze them. Keeps the moisture in but the ice crystals and extra moisture out. That's really weird. Maybe this has happened to someone else...
