Wedding Coming Up Need Help With Modeling Chocolate

I have a problem I'm hoping someone here can help me with.
I'm getting married in less than two weeks. My wife-to-be picked out a certain cake that she wants and my mother is going to try to make it.
I have an artistic background and told my mom I'd work with her on it because there are some design elements to the cake that she might have trouble with.
Most of the cake is to be covered in designs made out of Modeling Chocolate. I've tried a recipe for it but whenever I make it, it's too sticky and I cant get it to do what I need it to.
Any help would be appreciated.

try 10 oz of semi sweet to 1/2 c. corn syrup. Stir till it cools a bit. It may not look smoot yet. Don't worry. Stick it in the fridge for a couple of hours (or shorter if you spread it on a cookie sheet). It will seem hard. Take small bits and knead......................it should be ok. If it is too hard, mix some of your sticky stuff in.......good luckicon_smile.gif

for best results after stirring the cornsyrup in I keep stirring until you see a definate change in all of it then I pick it up and knead and squeeze letting the extra milk fat drip out between my fingers wiping extra off my hands as I knead then I wrap in plastic and let sit overnight on the counter..... It will get hard but kneading a bit will get it pliable

If you do not let it sit it will be sticky getting the extra liquid out makes a much better product.

Agreed. you need to get some of the greasy fat squeezed out of it. I've made some (haven't used it yet) but I recently kneaded it (it's been in my pantry all sealed up for a month or so) and it seemed very workable and not as sticky.
