the shop just opened and i have this cake for 230 ppl to make for this weekend and I have had no time to work on it. It is a 4 tier square cake with ribbon and fresh whole fruit. I need to have a good border of space to place the fruit so has a "bed" on the cake. what sizes should my tiers be? How large can my silver pedestool be?

Fresh whole fruit, four tiers, 230 people. Wow, that's a challenge. 1 16", 12" and 8" would give you 2" all the around each tier, would serve 232, but it's only three tiers. Are you putting the fruit around the bottom only, or around the bottom of each tier?

Does that include all three tiers?? If it does include the 8", then a little 4 incher on the top would be the anniv. tier, right? that would be 4........

so, 16, 12, 8 and 4 would work? The fruit will be in clusters all around the cake. I need room on the pedistool for a litte fruit too.

According to Earlene, that's only 198 servings. Of course hers, I think, seem bigger than most, certainly colettes...............By her servings you have plenty.......
