Since I saw all these postings on the Lofthouse sugar cookies, I thought I woauld add that we love the macaroons that Kroger aka Ralphs (in CA) sells. They appear to be piped out and bottoms are dipped in chocolate and a little choc drizzle on them. The macaroons I make for my husband are pretty much just the sweetened condensed milk, coconut and vanilla. They are very sticky. I am not so fond of them but he is. I would like to duplicate these cookies at Ralphs.... Guess I would need a pretty large tip to not get clogged with coconut... Recipes?
The cookies you mentioned might be what is called Haystacks. Just find you a good macaroon recipe and use an ice cream scoop to portion them. You can form them with your hands like stacks of hay, and then when they are baked and cooled dip the bottoms in choc and drizzle your chocolate on them. Also, when you bake these double up on your cookie sheet and use parchment, it will help them with browning too much. Since macaroons have alot of coconut and egg whites they will brown fast. You could pipe them, but you would need a jumbo open tip to do that. I love macaroons they are so good.
you are looking for your average COCONUT MACAROON COOKIES! they are pretty sticy and you need to pipe them out. Simple enough to find on the 'net as I don't have my recipe book at home anymore
